Rich, with a lot of personality

Sure, that sounds like a description for a dream husband (which I already have, mind you), but I'm really talking about the food in New Orleans. Maybe we just happened to go to the right places, but the food was great.

Sauces filled with an alchemical mix of herbs, then simmered for a long, long time. Strange meats like alligator, rabbit or just crayfish. Gumbo, jambalaya. Or maybe, simply fluffy beignets that are the equivalent of warm, croissants fresh out of the oven, doused with confectioners sugar then dipped in cafe au lait. You can't find that anywhere else.

Beignets are great, but it's perfection when dipped in coffee.
Alligator sausage with side of peanut fish sauce. Corn and shrimp chowder at the Gumbo Shop
Shrimp Creole at the Gumbo Shop.
Smoked pork ribs with watermelon pickle at Cochon.
Baked oyster with kale dressing at Cochon.
Pineapple upside down cake with coconut lime sorbet and dulce de leche at Cochon.
This isn't even everything. Now, you'll have to excuse me, there's probably a bit of drool that I need to go wipe off. Happy Friday, everyone!
