(Not so) Quick Fix: Roast Beets with Goat Cheese

Carlos and I never know what to do with beets. We both didn't grow up with the vegetable, so when we accidentally received some in our CSA box, the beets pretty much hung out in our refrigerator. Finally, we had nothing else to cook, but those beets, which forced us to do our research.

One recipe that caught our eyes was the simple "Roast Beets with Goat Cheese." We love cheese, so we figured anything that listed that as an ingredient couldn't be too bad.

Goat cheese
Salt and pepper
Balsamic Vinegar

Roast the beets.
  • Preheat the oven to 375 F
  • Rinse beets and trim the tops. 
  • Wrap beets in foil. Roast until beets are tender or easily pierced by a knife (about an hour). 
  • Remove the skin. 
  • Slice.
Spoon a bit of goat cheese on each sliced beet. 
Drizzle with balsamic vinegar
Spoon a chunk of goat cheese in the middle for additional toppings (if desired).

We toasted extra slices of bread, opened two bottles of beer and had at it with the beets. Ta da!

Cooks note: This recipe takes time because of the roasting, which is why we're not too keen on it. It does make for a tasty dish. Anyone else know a faster recipe other than eating beets raw?
