Quick Fix: Asparagus Salad

Posted by Carren Jao Pineda |

Life has been so busy lately that we haven't had much time to cook. When our box of veggies came at the door, we knew we had to cook something quick and fast. This is most probably the plainest salad you could have, but the orange slices complement the salad dressing we concocted. The asparagus also adds a little crunch to an otherwise leafy mix.

Take note, we were preparing this near the midnight hour, so it's a real no-brainer.

Ingredients

For the salad
Asparagus
Lettuce
Oranges
Lemon juice
Olive oil

For the sauce
Vinegar
Olive Oil
Honey
Salt and Pepper
Rosemary

Preparation
  • Cut asparagus into small spears. Stir fry with a little bit of olive oil and lemon.
  • Wash the lettuce and tear the leaves as you drain.
  • Peel the oranges.
  • Combine all ingredients for the sauce to taste.
...and we're done! Enjoy!
