Quick Fix: Fresh Honey Mustard Salad

Posted by Carren Jao Pineda |

We had a ton of lettuce leaves from our CSA box. When you have that much lettuce, you need to make a lot of salad. You also need a lot of dressing, so we did some digging on how to make our own.

I didn't believe it at first, but it's really easy to make a yummy dressing. Here's a great intro by Kathy Maister we stumbled on. Inspired by that, we've been experimenting with some combinations. So far, my favorite has to be the Honey Mustard Salad.

Salad dressing
Dijon mustard
Olive Oil
Worcestershire Sauce

Any veggies you want
Fresh basil
Grated Mexican cheese

  • In a bowl, mix all salad dressing ingredients together. If you want a more liquid dressing, add your olive oil. If not, simply go without it. Mix all ingredients to taste.
  • Cut veggies and throw in the bowl
  • Top with fresh basil and grated Mexican cheese. Tip: Fresh basil is the key. Go for fresh or don't go for it at all. The salad will still be good, but it'll miss that just-picked-from-the-garden flavor.
