Quick Fix: Zucchini Carrot Wraps

My fiance and I got some good comments on this photo when we posted it. So, we're sharing the recipe with you guys. Really, it's a lot easier than you'd think.

Carrots, sliced lengthwise
Zucchini, sliced lengthwise
Rice, cooked
Corn tortillas
Sweet chili sauce
Olive oil
Four cheese, shredded

  • First, cook the rice as instructed in the package. You won't need a lot, so you can try making a small batch.
  • While the rice cooks, stir fry the zucchini and carrots cut lengthwise in a pan with a bit of olive oil. After a few minutes, remove zucchini and carrots from pan.
  • Heat up the corn tortillas in the same pan for just a minute.
  • When the tortillas have warmed, put the warm tortillas on a plate along with the stir fried zucchini and carrots.
  • Add a small spoonful of rice on each tortilla.
  • Sprinkle with shredded four cheese on top of each tortilla.
  • Microwave tortillas for 30 sec-1 minute, or until the cheese melts.
  • Top with a sliver of sweet chili sauce.
  • Wrap the wraps and enjoy!
